Homemade Tikka Masala

  • 4 tsp ghee
  • 2 cloves garlic, crushed
  • 2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper (for mild, add more if desired)
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • 1 cup tomato sauce
  • 1/2 cup half & half
  • 1/1/2 tsp paprika
  • 2 tsp sugar
  • 1/4 tsp curry powder

Measure out all spices in a small jar first so they are ready to go.

TIKKA MASALA SAUCE:  In a medium sauce pan on medium high heat, melt ghee. Add crushed garlic and saute for a minute or so. Add tomato sauce, half & half and spices. Simmer on low.

RICE:  In another pan, start your rice.  I use Organic Basmati, but you can use any kind you like.  My measurements are 1 cup water to 1/2 cup rice.  Boil the water first and add a little salt and a tsp. of ghee. Add the rice. Cover and simmer until water has evaporated and rice is fluffy. (Approx. 10-15 minutes)

While that’s cooking, saute the meat of choice in a skillet until almost cooked.  Drain any liquid and pour the masala sauce over the meat / fish in the skillet and continue to cook until meat is done.

Remember that Ayurveda is all about enjoying every part of your meal including how it looks, tastes, smells and the environment you eat it in.  Take a minute to scoop the rice in the center of the plate, if you are serving it with vegetables, try putting them in a circle around the outside of the rice to make it look nice. Add your topping to the center on top of the rice and garnish with fresh cilantro or parsley. Sit down together at the table and enjoy a meal cooked with love that will nourish you and your soul.
